      Ingredients

      4 Tbsp. each: butter and flour
      1 c. milk
      2 Tbsp. minced onion
      16 - 20 oz. frozen chopped spinach
      4 oz. sour cream or cream cheese
      1/4 c. shredded Parmesan or Romano cheese
      1 or 2 tsp. salt, to taste

      Instructions


      Melt 3 tablespoons butter in a small skillet over medium heat. Add flour, stirring, until blended; simmer 2 or 3 minutes. Stir milk in gradually and cook until thickened and smooth; use a wire whisk to blend completely. Remove pan from heat. 

      Place remaining tablespoon of butter in a 2-quart saucepan. Melt over medium heat, add onions and cook 3 or 4 minutes or until tender. Stir in spinach; add 2 tablespoons water, cover pot and reduce heat to medium-low. Stir occasionally and cook until spinach is tender. 

      Stir in white sauce, sour cream (or cream cheese) and Parmesan or Romano cheese. Season with salt, to taste. Stir well to blend and simmer a few more minutes. Serve while hot.
